Popped Amaranth Cereal
Do you ever get cravings for cereal? I know I do, despite knowing how much sugar and preservatives are added in. Well, let me present a fun (and healthy!) solution: popped amaranth. You treat it like stovetop popcorn: heat up a lidded pot (clear lids are better so you can see it), add a tablespoon or two of dried amaranth, and keep it moving while it pops away! I do it in batches, and it may take a little bit to get the heat right, but it pops up in seconds and then you can just dump it in a bowl to cool and do the next batch.
