Savvy Scrap Saving
I once heard a story about a teacher who was talking to his students about perceptions. He had some paper, and when he asked his students what he had, he got the obvious response – “Paper”.
However, upon scrunching it up and putting it in a garbage can, it suddenly became garbage. It was still paper, but one small action completely changed the students’ perceptions, and it was hard to shift their mindset back, even when he pulled it out and wrote on it.
I find that it’s the same way with food. We are so trained to see things a certain way, that it can be difficult to change that lens. But once we do, a whole new world of options opens up.
Take broccoli, for example. Most recipes call for you to take only the heads of broccoli and discard the stems. But did you know that you can make a delicious broccoli stem pesto? Or sauté kale stems with a bit of garlic and shallots for a tasty side dish? Or pickle watermelon rind?
So, maybe it’s time to rethink those scraps that you are just chucking into the bin, and give citrus peels, herb stems, and carrot tops a second chance at life- even if it is just to use them in a good old fashioned soup stock.
